Fresh Atlantic salmon is MiMi J’s preferred choice for this delicious fish. She’s taken the idea of Salmon Croquettes and made them her way. This cake is made without using breading and eggs as a binder. The salmon is ground down and seasoned with good things like green onions, MiMi J’s blend of seasoning and Capers. Then the salmon is weighed out to 5 oz portions and rolled into balls that are then coated in seasoned Panko Bread Crumbs. Again, not using eggs as a way to hold the breading to the cakes. They are baked in the oven until cooked through. This cake is paired with MiMi J’s Baked Potato Casserole. The casserole is layers of creamy white potatoes, olive oil, roasted asparagus and sautéed sweet Vidalia onions then it’s topped off with the asparagus tops, toasted parsley almonds, and a little Pancetta. Oh! We can’t forget the sauce for the salmon cake. The sauce is MiMi J’s Caper Butter Sauce. It is so good you will want to drink the sauce. Really! You will want to drink it!
